Sur la photo ce sont des abats (foie, c\u0153ur, rognon) de chevreuil, mais je fais la m\u00eame chose avec le cerf ou le sanglier<\/p>\n

 <\/p>\n

D\u00e9couper les abats en fines tranches\u00a0 (moins d\u2019un centim\u00e8tre)<\/p>\n

Eplucher et ciseler une dizaine d\u2019\u00e9chalotes (en fonction de la taille)<\/p>\n

Faire une fondue d\u2019\u00e9chalotes et r\u00e9servez<\/p>\n

 <\/p>\n

Poelez \u00e0 feu vif les abats avec un peu d\u2019huile d\u2019olive<\/p>\n

Saler poivrer<\/p>\n

Un fois tous les morceaux dor\u00e9s, d\u00e9glac\u00e9 avec 4 \u00e0 5 CC de vinaigre balsamique et \u00bd verre de fond de veau. Baisser le feu et laisser r\u00e9duire quelques minutes.<\/p>\n

Ajouter les \u00e9chalotes et 20 cl de cr\u00e8me fraiche<\/p>\n

Remuer et laisser r\u00e9duire quelques minutes, ajuster l\u2019assaisonnement sel\/poivre \u00e0 votre gout<\/p>\n

En fin de cuisson, ajouter quelques feuilles de persils frais.<\/p>\n
